Początek lata zawsze kojarzył mi się z obfitością truskawek. Kiedyś sezon truskawkowy trwał miesiąc, dziś świeżymi truskawkami możemy cieszyć się praktycznie cały rok. Jakość zimowych truskawek przemilczę;) ale z całego serca zachęcam do korzystania z czerwcowych owoców. Knedle to takie danie w stylu ziemniaczanego zero waste, no bo cóż począć z nadmiarem ziemniaków? Ano najlepsze bezglutenowe i wegańskie knedle z truskawkami! Lepienie bezglutenowych pierogów z truskawkami nie jest łatwe, ale już przy knedlach nie ma najmniejszego problemu! Ciasto będzie też idealne na jesień, gdy na każdym kroku będą czekać na nas śliwki!
Przy knedlach, kluskach i innych kopytkach ważna jest odmiana ziemniaków. Istotne, aby wybierać odmiany mączyste, które maja wysoką zawartość skrobii (typ B lub C). To ona pozwala na łatwe lepienie klusek. Wiem, że jest wiosna i młode ziemniaczki kuszą, ale je zostawcie raczej na inny obiad. Młode ziemniaki maja więcej wody a mniej skrobii, dlatego będą potrzebowały więcej mąki do zlepienia. Ciasto na knedle lub kluski z młodych ziemniaków może gorzej się lepić lub być twardsze przez dodatek większej ilości mąki.

500 g ugotowanych ziemniaków
80 g skrobii ziemniaczanej
60 g mąki ryżowej
truskawki (20-25 sztuk)
Przygotowanie
- Ugotowane, przestudzone ziemniaki przepuść przez praskę, dodaj mąki i zagnieć ciasto. Z ciasta ulep wałek i podziel go na mniejsze kawałki, po czym rozpłaszcz na placuszki.
- Na środek placuszka połóż po średniej wielkości truskawce i szczelnie oblep ziemniaczanym ciastem.
- Wrzucaj na osolony wrzątek i gotuj 2-3 min od momentu wypłynięcia.
Wskazówki
- Z podanej porcji wyszło ok 20-25 knedli
- Do polania możecie użyć ulubionego jogurtu. Ja wykorzystałam resztki z orzechów z robienia mleka, wanilii i syropu klonowego. Knedle posypałam podprażoną na suchej patelni mąką migdałową.
- Nie polecam mielenia ziemniaków w maszynce do mielenia / blenderze. Mogą zrobić się lepkie.
I jak nie kochać lata? Bezglutenowe i wegańskie knedle z truskawkami to najlepsza propozycja na letni obiad lub kolację. Jeśli macie za dużo ugotowanych ziemniaków sprawdźcie też moje przepisy na kluski lub kopytka.
