Jedni nie wyobrażają sobie świąt bez piernika, inni bez makowca, są też miłośnicy serników. Nie znam nikogo, kto nie lubiłby najmniejszej, najpyszniejszej i najbardziej aromatycznej formy świątecznych pyszności. Małe serduszka, gwiazdki, bałwanki, choinki, śnieżynki królują w grudniu w każdym domu. Pierniczki doskonale smakują zawsze, ale przyznacie, że zimą jakoś bardziej niż zwykle. Mój przepis na bezglutenowe pierniczki przetestowałam chyba 10 razy, zapotrzebowanie na pierniczki jest u nas ostatnio bardzo duże;)

80 g skrobii z tapioki
1 łyżeczka kakao / karobu
1 czubata łyżka przyprawy do piernika
1/2 łyżeczki sody
100 g miodu
100 g masła / margaryny
1 jajko
Przygotowanie
- Tłuszcz i miód podgrzej w garnku razem z przyprawą do piernika aż do rozpuszczenia.
- Pozostałe suche składniki wymieszaj w misce, dodaj jajko i przestudzone masło z miodem. Ciasto będzie jeszcze rzadkie. Całość dokładnie wymieszaj i wstaw na ok godzinę do lodówki.
- Piekarnikową blachę do pieczenia wyłóż papierem do pieczenia. Blat obsyp delikatnie skrobią aby ciasto się nie kleiło. Ciasto wałkuj na ok 0,5 cm grubości. Wycięte pierniczki ułóż na blasze i wstaw do nagrzanego piekarnika na 170° na 13-15 minut do lekkiego zezłocenia.
Wskazówki
- Pierniczki nie są za słodkie, jeśli wolisz słodsze wypieki rozpuść trochę wybranego słodzidła (sypkiego, nie płynnego jak syrop klonowy) razem z miodem i masłem. Mąkę gryczaną możesz zamienić na jaglaną, pierniczki są jednak odrobinę bardziej suche.
- Ciasto możesz wałkować też pomiędzy dwoma arkuszami papieru do pieczenia.
- Pierniczki idealnie nadają się do lukrowania. Możecie przygotować je wcześniej i zamknąć w pojemniku. Po tygodniu nadal są bardzo smaczne, nieco bardziej kruche. Niestety dłużej nie wytrzymały bo zostały zjedzone 😉
Na pierniczki sprawdzi się też ciasto na piernik dojrzewający last minute. Te będą bardziej miękkie i bardziej piernikowate w strukturze.
